Scrummy Seafood Chowder

This is a lovely recipe for children and at nursery we always have lots of clean plates. Crusty bread is a good accompaniment to mop up the sauce!

 

 

 

Ingredients for a hungry family of four

 

4 potatoes, peeled and cubed

1tsp olive oil

1 leek, chopped

1 garlic clove, crushed

200g white fish (coley or basa are good alternatives to cod)

50g sweetcorn

50g cream cheese

100ml milk

100g cooked prawns

 

Boil the potatoes until just tender.

Sweat the leeks and garlic in a big pan and place the fish on top to steam for 5 minutes.

Add the potatoes, sweetcorn and cream cheese to thicken the sauce and simmer for a few minutes. Add the prawns and continue to cook until piping hot, around 5 minutes.
