Meatballs in Tomato Sauce


One of our favourite nursery meals, this recipe can be adapted to suit a family-sized appetite.


Tomato Sauce
1 tablespoon of oil
1 medium onion, peeled and chopped
1 garlic clove, crushed
400g can of tomatoes, chopped
1 teaspoon of caster sugar
freshly ground black pepper
1 tablespoon of mixed dried herbs

450g lean minced beef
1 medium onion, peeled and chopped
1 eating apple, peeled and grated
50g breadcrumbs
1 tablespoon dried parsley
freshly ground black pepper
Plain flour for dusting meatballs

Make the sauce by gently cooking the onion and garlic in oil until softened. Stir in the tomatoes, sugar, pepper and herbs and cook for 20 minutes over a low heat. You can serve the sauce as it is, or blend until smooth in a food processor.

Meanwhile, mix the ingredients for the meatballs together. Using floured hands, form them into about 24 balls. Bake in the oven on a baking tray for about 25 minutes, or until there is no pink meat showing in the centres.
